A three-day Goa wedding is five bookings, not one

A destination wedding in Goa usually means a welcome dinner, a haldi or mehendi by the pool, a sangeet on the lawn, the ceremony at sunset and a farewell brunch. Each uses a different space, a different kitchen plan and often different vendors. If your system records the wedding as a single booking, the lawn looks free on the sangeet night and someone sells it to a corporate dinner.

Book each function as its own line under the wedding: space, time, guest count, menu and the vendors allowed in. Room blocks sit alongside with arrival and departure dates. The event manager then sees on one screen that the lawn is taken from 4 pm to midnight on the Friday, and that 40 rooms need early check-in because the guests land on the morning flight.

Planners from out of state often work through a local coordinator. Record who is authorised to change the guest count and the menu. When three people message the resort with conflicting instructions, a single named approver saves the kitchen from cooking for the wrong number.

Beach ceremonies: the Coastal Zone approval that has to come first

Most Goa beaches fall within the Coastal Regulation Zone, which means a mandap, stage, deck or lighting rig on the sand must be temporary and removable, and an organised event needs prior permission from the Goa Coastal Zone Management Authority. Sites close to sand dunes or turtle nesting areas are handled far more strictly.

Do not confirm a beach ceremony as final until the permission is in hand. Sell it as a lawn ceremony with a beach upgrade that becomes effective on approval, and give the family a fallback layout on the lawn. Families rarely complain about a plan B they were shown in advance; they complain loudly about one invented the week before.

Keep the approval, its conditions and the permitted setup and removal times on the booking itself. Your décor partner needs to know that everything must be off the sand by a stated time, and the family needs to know why.

Why a Goa resort's banquet bill can carry 18% GST when a village hall charges 5%

GST on event food depends on the premises. At an ordinary venue, catering and a hall-plus-food package are taxed at 5% without input tax credit. At a 'specified premises', broadly a hotel that supplied rooms at a value above ₹7,500 per unit per day in the previous financial year, or one that declared itself as such, restaurant and banquet food is taxed at 18% with input tax credit.

Many beach resorts in North and South Goa cross that line in season, so their wedding dinners are billed at 18%. A banquet hall in Margao hosting a local reception is not a specified premises and bills the same food at 5%. Both are correct. Getting it wrong, in either direction, shows up later as a tax demand or an unhappy corporate client whose credit was disallowed.

Room charges follow their own rate: 5% for rooms at ₹7,500 or less per night and 18% above. Keep rooms, food, décor and entertainment on separate lines so each carries the right rate, and confirm your status with your accountant each April.

Goan Catholic and Hindu weddings: the local calendar the tourist season hides

Local weddings keep Goa's banquet halls busy even in months the tourists skip. A Catholic wedding often follows the church ceremony with an evening reception at a hall with a live band, a dance floor, a toast and a formal dinner. Hindu Goan weddings follow family and temple customs with their own timing and menus. Christmas, Ganesh Chaturthi and the feast days of local churches all move demand and staff availability.

These families book halls months ahead and care about the band slot, the dance floor and the bar, so write the music end time and the bar arrangements into the quotation. For weddings during the monsoon, a covered entrance matters more than the view.

Occasional liquor licences and the 10 pm question

Goa's excise rules have a separate occasional licence for serving liquor at a special occasion or event, with fees that scale by the number of guests and the number of bar points. A licensee's regular licence does not automatically cover days the Commissioner of Excise notifies as special. Budget the licence into the quotation instead of discovering it three days before the sangeet.

Music outdoors is the other recurring issue. The national noise rules stop loudspeakers in the open between 10 pm and 6 am, and Goa's pollution control board and police enforce this at beach and lawn venues. Plan the sangeet's loud portion to end on time, and move the late part of the night indoors if the family wants to keep dancing.

Seafood, Mapusa Friday market and menus that travel

Goan menus lean on fish, prawns and coconut, and the catch changes with the season and the monsoon fishing ban. Caterers buy at Mapusa and Margao markets for vegetables and local produce, but plan seafood with a supplier who can commit to quantity and freshness on the day. A wedding menu promising kingfish should name a substitute if the catch is poor.
