An event kitchen does not take orders table by table. It receives one big order weeks ahead and has to turn a headcount into quantities, batches and start times. These are the pieces that make that reliable.

Event KOT versus restaurant KOT: what changes when you cook for 500 at once
In a restaurant a KOT, or kitchen order ticket, is a slip that says table 7 wants one paneer tikka and two dal. It starts with a waiter and lives for twenty minutes. In catering the same three letters mean something else: the production plan for one event, split by station and by time. There is no waiter and no table. There is a guaranteed headcount, a menu of 12 to 20 dishes and a service at 7:30 pm. That is why search results for 'catering KOT software' are mostly restaurant billing tools. They solve the table ticket, not the event ticket.
The core of an event KOT is arithmetic. The site's wedding grammage guide uses grams per guest: 35 g of dry dal, 55 g of paneer in a main, 35 g of basmati for the biryani, 75 g of atta for rotis. For 500 guests with a 5% buffer, Dal Makhani needs 500 times 1.05 times 35 g, or 18.4 kg dry. Add a 2% trim loss and the buy is 18.75 kg, which is two batches in a 15 kg degchi. The 13-dish sample menu in the workbook comes to about 353 kg of raw material for one dinner. Nobody should be doing that on a calculator on Thursday night.
Then the guest count moves. The change-order sheet takes 480 to 540 and shows the shift dish by dish: 36 kg more across the menu, with the mixed vegetable going from 71 kg to 80 kg and from four batches to five. That one line matters, because a fifth batch is another degchi and another 40 minutes. Dishes that serve a fixed number, such as 40 Jain guests or 300 who eat chicken, stay where they are unless you change them. A ticket system that rewrites only the total and lets the kitchen discover the extra batch at 4 pm has not helped anyone.
Split the menu by station, not by course. Tandoor, gravy, rice and biryani, sweets, live counters, cold and salad, and a separate Jain kitchen each get their own ticket with dishes, quantities and a start time. Work backwards from service. In the sample, Dal Makhani goes on at 11:30 for a 7:30 pm service, since it wants eight hours on a slow flame, the paneer gravies about 5:30 pm and the salad section at 6:00 pm. The station sheet shows the earliest start for each station, which is the time its head must be standing at the counter. Lead times here are typical for these dishes, and your chef's numbers are the ones that count.
Jain preparation is a different kitchen, not a different dish. No onion, garlic or root vegetables, separate oil and utensils, often a separate burner and a separate person. In the workbook the Jain dishes form their own station and each serves 40 guests, so their weights are small, 1.5 kg of dal and 5.9 kg of vegetables, and hard to confuse with the main pot. Label the containers at packing and again at the buffet. Digital tickets help by keeping the Jain count on every screen, where a handwritten note might only ever be read by one captain.
The ticket does not end when the food is cooked. Dispatch is the checklist that decides whether it arrives hot and complete: hot boxes, chafing fuel, serving spoons with 25% spare, crockery counts matched to guests plus a breakage allowance, water and ice, the licence copy, and a return list for utensils. Fuel is the item people underestimate. At about 0.9 kg of LPG per burner-hour, which is within the 0.8 to 1 kg range distributors quote for catering burners at high flame, ten burners for three hours plus a 25% reserve comes to 33.75 kg. That means two 19 kg cylinders on the van. Ask your own distributor for your figure.
Tablets in a kitchen are not automatically better than paper. Steam, oil and wet hands are hard on screens, and a field kitchen at a farmhouse may have no signal at all. Printed station tickets remain useful. What you want from software is the calculation and the change tracking, with a print option and clear behaviour when the network drops. Ask any vendor what happens with no internet in the kitchen, and whether a ticket printed at 3 pm shows that it is out of date at 4 pm after the count changes.
